This has been a Kelman family Passover fave forever. I no longer remember how I acquired the recipe. I usually make two batches before I start cooking anything else. Now my kids all make it too!
Ingredients:
- 3 eggs, beaten
- 1 cup sugar
- 1 cup oil
- 1 cup chopped nuts and/or tiny chocolate chips or shaved chocolate
- 1 ½ cups matza cake meal
- ½ teaspoon salt
- ½ teaspoon cinnamon (can vary with ginger, allspice, etc.)
Steps:
- Combine all ingredients and let mixture stand for 30 minutes.
- Shape into 3 or 4 high thin rolls or loaves. Hands should be wet and cold. I use ice cubes. WORK FAST!
- Set on a cookie sheet or jelly roll pan. (They will spread so leave room but get it in the oven ASAP!)
- Bake for about 25 min at 350.
- Cool.
- Slice. Use a very sharp knife to minimize crumbling.
- Return to oven to toast until golden brown.
