Vicky Kelman’s Passover Mandelbrot

This has been a Kelman family Passover fave forever. I no longer remember how I acquired the recipe.  I usually make two batches before I start cooking anything else. Now my kids all make it too! 

Ingredients:

  • 3 eggs, beaten
  • 1 cup sugar
  • 1 cup oil
  • 1 cup chopped nuts and/or tiny chocolate chips or shaved chocolate
  • 1 ½ cups matza cake meal
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (can vary with ginger, allspice, etc.)

Steps:

  1. Combine all ingredients and let mixture stand for 30 minutes.
  2. Shape into 3 or 4 high thin rolls or loaves. Hands should be wet and cold. I use ice cubes. WORK FAST!
  3. Set on a cookie sheet or jelly roll pan. (They will spread so leave room but get it in the oven ASAP!)
  4. Bake for about 25 min at 350.
  5. Cool.
  6. Slice. Use a very sharp knife to minimize crumbling.
  7. Return to oven to toast until golden brown.
